Dijon cheddar chicken

Apparently this blog has slowly turned into a documentation of all the delicious food I have been cooking.  I swear, it wasn’t even my main intention to create a foodie blog – it just seems that lately all I’ve had time for is work and cooking, so I might as well make the latter pretty and share it with all of you, right?  Here is my official promise to create some fantastic crafts to share very, very soon.  Next weekend perhaps.  Keep your eyes peeled.

In the meantime, here are two pictures of tonight’s dinner: dijon cheddar chicken!  The flavours in the sauce were lovely, and I finally overcame my fear of mustard and tried it!  So glad I did.  The light on the porch was kind of shady today (bad pun? I think so!), so I hope these pictures are alright!  Enjoy!

Waffles

Since my friend Alan is here from Montreal, I have been eating rather decadently (since he is a self-proclaimed food snob).  Last night for dinner we had onion and mushroom crêpes with melted brie.  THAT was only the appetizer – we then cooked up some delicious trout and had that with baguette…wonderful, right?  Unfortunately, I didn’t take any pictures, since by the time we finished cooking everything, it was dark outside, and the dining room light just wasn’t cutting it…

Anyways, this morning I knew we were going to have to make something just as gourmet as last night’s dinner – for some reason I just knew Alan wasn’t a “Cheerios and milk” sort of guy.  Here is a picture of the delicious waffles we made, using my fairly new yard sale purchase: a $10 never-used belgian waffle maker!

Honey-Garlic Pork Medallions with Couscous

Although I’m super tired after my first week of work (It’s an AWESOME job, but I’m not used to 7 a.m. mornings – yes, I am whining a bit), I decided it was important to celebrate the completion of the week with a good dinner.  I came home after work and started flipping through my trusty Canadian Living cookbook.  I had marked this recipe as one I wanted to try, so I figured I would go for it tonight.  I promptly biked down to the grocery store and picked up the few ingredients I was missing and then, with the sounds of a Friends episode blaring in the background, I started cooking.  And here we are!  The dish tasted so good, and since it made enough for a small family, I will have plenty of leftovers for tomorrow.  I love my leftovers!

Lemon Parmesan Linguine

I figured since it’s Mother’s Day, I should try to cook a dinner for myself that is at least almost as good as something my mom would make.  I whipped open my fancy schmancy new cooking book and made lemon parmesan linguine, complete with a whole three different types of vegetables.  Best part?  Leftovers!!!

Also, since the lighting in our dining room sucks, I took my plate outside to take these pictures, which is why you see grass/road in my pictures.  Yes, kind of lame I realize, but it worked!  It also cooled my supper off nicely, perfect for immediate face stuffing.

Birthday dinner for dad

Adventuring outside the world of Kraft Dinner and foods made on tortillas used to be a challenge for me, however, I would like to think that I am very slowly becoming a bit more accomplished in the kitchen.  Anyways, my dad’s birthday is next week and since he will be in Sweden for the big day, we decided to celebrate a week early.  Obviously wanting to show off my newfound cooking abilities, I offered to make dinner and dessert for my dear old dad and the fam.  Thankfully, the meal turned out awesomely, and I managed to prevent the stove from lighting on fire.  I know, good job me.

I made two recipes from my nice, brand new cookbook, Canadian Living’s Everday Favourites cookbook, with which I am now completely enamored.  Here are the results of my afternoon labours…
