New York Cheesecake with Strawberry Sauce

Since I’ve been promising myself for about a week that I would make a cheesecake, I finally got around to doing so last night.  Let me tell you, it is quite the time-consuming process.  The ingredient mixing is the fun part…then comes four hours worth of baking, cooling, chilling and stressing out about whether or not your cake will be destroyed by the base of the spring-form pan.  Luckily, after watching a helpful, random video on topic, I was successful, and the rest is baking history!  I pretty much whipped up the strawberry sauce so the cheesecake wouldn’t look boring.  You know me, I’m all about colour!

Cheesecake verdict: my first time making this wonderful dessert was a huge SUCCESS!!!  Other than a few minor challenges served up by our psychotically hot stove, this was a rewarding experience.  Rewarding in the sense that I got three pieces of cake…

Ground beef curry

Today when I got off work I was almost absolutely positively sure I was going to bike over to the nearby-ish chinese food restaurant and pick myself up a delicious combo number 10.  After realizing I was far too poor and far too lazy to bike all the way to Hog’s Back (really not that far, but Wednesdays are exhausting, are they not?) I decided I would attempt to recreate another one of Canadian Living’s cookbook specialties.  I had some extra ground beef hanging around the freezer, and had been craving indian food almost as badly as chinese, so I decided this would be the perfect recipe for today!

And so, after dragging my tired, working butt down to the grocery store to buy curry paste, I created this… there was enough food for me, my friend Mike and lunch AND supper tomorrow night.  Oh man, I will be curry-ed out.

Interesting story involving the origins of the peas: I only had a frozen bag of mixed peas and carrots, so I patiently picked through the entire bag until I had a the required one cup of peas.  Just perhaps, this is a sign I have too much time on my hands.  Special thanks goes out to the random mint plant chilling on our kitchen counter: you added the beautiful green colour at a time when the peas turned a not-so-nice shade of curry brown.

Dijon cheddar chicken

Apparently this blog has slowly turned into a documentation of all the delicious food I have been cooking.  I swear, it wasn’t even my main intention to create a foodie blog – it just seems that lately all I’ve had time for is work and cooking, so I might as well make the latter pretty and share it with all of you, right?  Here is my official promise to create some fantastic crafts to share very, very soon.  Next weekend perhaps.  Keep your eyes peeled.

In the meantime, here are two pictures of tonight’s dinner: dijon cheddar chicken!  The flavours in the sauce were lovely, and I finally overcame my fear of mustard and tried it!  So glad I did.  The light on the porch was kind of shady today (bad pun? I think so!), so I hope these pictures are alright!  Enjoy!

Waffles

Since my friend Alan is here from Montreal, I have been eating rather decadently (since he is a self-proclaimed food snob).  Last night for dinner we had onion and mushroom crêpes with melted brie.  THAT was only the appetizer – we then cooked up some delicious trout and had that with baguette…wonderful, right?  Unfortunately, I didn’t take any pictures, since by the time we finished cooking everything, it was dark outside, and the dining room light just wasn’t cutting it…

Anyways, this morning I knew we were going to have to make something just as gourmet as last night’s dinner – for some reason I just knew Alan wasn’t a “Cheerios and milk” sort of guy.  Here is a picture of the delicious waffles we made, using my fairly new yard sale purchase: a $10 never-used belgian waffle maker!

Stratford

I took these pictures last weekend when I was in the gorgeous town of Stratford for my brother’s badminton tournament.  If it hadn’t started to rain, I would have taken way more pictures, but as is I almost didn’t jam my camera into my purse in time to hide it from the downpour.  Also discovered a sweet thrift store while exploring: +1 Hilary.

While I was in Stratford, my mom and I also attended a showing of Peter Pan, put on as part of the Stratford Festival.  I hadn’t been to any of the festival’s plays since grade 10, so to go again was an amazing experience!
